FAMILY DINNER - ideas?
First of all HAPPY VALENTINES day buddies
I hope you all have a happy and warm day. I know many of you are dealing with snowstorms etc. Think Spring!

Now I’m hosting a family dinner on Friday night and am looking for some ideas. Normally I make something like lasagna or chicken wings but I’m looking for something with a lot less calories. We normally would have sides like scalloped potatoes, perogies - see my problem here?
Then the very fattening desserts to go along with it. Gee I wonder how I got to weigh this much in the first place?
As far as dessert goes I have decided to do a nice fruit platter maybe with a yogurt dip. I know not the best season for fruit but I’ll see what I can find.

The main dish is giving me a headache so I’m hoping that you might have some suggestions for me. I really want to be able to stay on track this weekend.
To top it off I also have a potluck dinner to go to on Saturday for my son’s Scout group.
Talk about a weekend of challenges

How about a nice roast chicken, baked potatoes, green beans and a big salad? The baked potatoes can be light, or they can be loaded up with bad stuff - for those who might complain about the light fare.
Allrecipes.com is a great source for recipes, if you need any.
What about a taco bar? Make some ground beef/ground turkey/shredded chicken, etc, black beans, refried beans, then all the fixins to go on top. Everyone makes their own, and that way you can have a nice healthy one and someone else who isn’t counting calories can have a loaded one! Plus with tacos there’s so much great stuff you can put on, that’s low cal & packed w/flavor…spices & seasonings, great salsa, low-fat cheese, all those high fiber beans…yum!
I really like the taco bar idea….it can be done so that it’s a healthy choice, and it’s delicious! Good luck, I hope it goes well!
